The Scray Cheese Co.

So far this week, well, the last 6 days at least, we have experienced the Packers Thanksgiving game, Thanksgiving Dinner, Leinenkugels, more snow than we have seen, Larry McCarrens, and dinner at Curly’s. If that isn’t enough to remind us of where we are in the world then what is?

How about touring a family owned Cheese factory right here in East De Pere?

A few weeks ago, after having been called a Cheesemaker in Kansas City and broadcasting that fact on WAPL the following Monday, we were contacted by the Scray family, owners of The Scray Cheese Co. We were invited to head down and meet the owners, Deb and Jim for a tour of their factory and a sample of their freshly made cheese curds.

From our point of view the tour was great as we’d never seen cheese being made before. From Ben’s perspective it was everything he could have imagined. Machines, loud noises, buttons to press and trucks. All in the one location.

We saw the likes of Gouda, Edam and Cheddar with Tomato and Basil all being made. We even managed to see the Edam balls dumped in wax, stickered and shrink wrapped all at the same time.

We learned how to make cheese, when best to eat particular types of cheese and even a little about the history of local Cheese factories and their relationships with the local dairy farmers and milk producers.

Thankyou Jim and Deb, we had a great time.

We made our way straight home after that as Ben wasn’t well overnight and Kel felt a little funny this morning. By the time night fell we literally dropped like flies.
